capture embedded device mobile network data

I have the embedded device with a sim card. I want to sniff a data that comes to this device. SIM card can be easily injected. What is the easiest way to capture this data? The operating system is not principal. I buy xidol K5188 USB modem, but it works only with some additional software and only in windows (in Linux with usb_modeswitch dongle rebooting without any reason and not working at all). Can you please advise any other LTE USB modem that will normally work with Wireshark? (preferably in Linux). Or easiest way in this situation will be to use a raspberry pi with an LTE module?

Mobility service providers encrypt their data. Wifi is different because security is locally managed.

And how this info could help in my situation? My PC can get and work with traffic from LTE module authenticated with this SIM card. That is the problem to capture it? The only answer that I find is that Wireshark can not work with ppp. But probably should exist some instrument that could do it.
