Universities in South Africa -Monash etc. use the tool extensively, however, we do not get a chance to be part of forums or communities.

You can always drop a line to [email protected] and see what comes back. It would certainly help if you could get commercial backing for the idea, this event doesn't pay for itself and is not cheap to organise. Also the combination with Laura Chapell's Wireshark University Course is often a good reason to run the event.
