Just updated to Wireshark Version 3.2.3 (v3.2.3-0-gf39b50865a13) on macOS Mojave and the dark theme seems to sync with the OS dark mode (which is not necessarily a bad thing)
However I would like to keep my OS setting on dark mode but Wireshark on light. Is there a way to toggle it manually?
Usually programs with dark theme support have a toggle somewhere

In the code it looks like it is determined from the operating system:

Are you looking for a preference to over ride this?
Can you add a comment to the feature request on Bugzilla? Maybe there are plans to support this as it is completed.
Has this been incorporated? I do not see any sort of toggle button in preferences to disable dark mode. Also dark mode takes away all color highlighting for actual captured packets, which is a big no no for the kind of use I make of WireShark.
