Good Day I would like to monitor traffic flowing to and from my local Printer, I am keen to understand what is going in/out of the Printers NIC, I have a HP M577 MFD. is this possible.

Easiest would be if you have an old hub.
Next choice would be a switch configured with a monitor port.

Yes, just you need to specify the ip address of the printer by using this filter: ip.src == X.X.X.X , then you try to printer you will able to see all in/out traffic from your PC to your printer
