You can go into Wireshark itself, to the menu View | Internals | Supported Protocols, where you get a list of all protocols supported. If you want to know about what link layer types it handles (as a representation of the networks it works on) you can have a look at the link layer types and what is defined in the wiretap library in wtap.h.
