In general, you can't. There is some opportunity to get at the vendor of the phone by looking at the MAC address: use
https://www.wireshark.org/tools/oui-lookup.html
However, if the device is using fake MAC addresses while probing this may not work. Also, for instance, it can be difficult to determine the difference between an iPhone and a Macbook laptop. Both will show as Apple from the lookup tool.
Sometimes there could be extra fields in the Probe which might leak some information but this is not that common.
