How to find the protocol and format (fps, resolution...) of a livestream running on a mobile app?

I'm trying to investigate the streaming quality of taobao live and shopee live.
I ran the livestream on my iphone, did an ARP poisoning and saw the packets in wireshark.
But I don't know what to do next.
