how can i tell how many tcp ports are open in a capture file and which ports are open

Select Statistics | Endpoint List | TCP (IPv4 & IPv6) to see individual TCP ports in use (and the IP address in packets containing those ports).

Alternately, select Statistics | Conversations | TCP tab to see TCP peers that are communicating. Uncheck name resolution if you prefer seeing port numbers rather than names.
