Troubleshooting "Optimal-Latency" Omnissa Horizon Connection (SA to New Zealand)

I am trying to use Wireshark to analyze and troubleshoot intermittent freezing and call quality issues on a Omnissa Horizon, VDI environment hosted in New Zealand, while I am connecting from South Africa. Although baseline latency (~400–450ms) is expected due to distance, the issues occur inconsistently even when network tests (e.g., traceroute, ping) appear stable. I want to identify what to specifically look for in Wireshark captures—such as packet loss, retransmissions, jitter, or protocol-specific anomalies (e.g., TCP windowing, UDP drops)—to determine whether the root cause lies in network instability, ISP routing, or the VDI protocol behavior itself. What are the most effective filters, metrics, or analysis techniques to pinpoint the cause of these intermittent performance issues?

Hi there, that's a huge question when discussing performance issues. It's not easy to identify the problem or give a good answer based solely on your description. If you could anonymize the pcaps and share them, that would be a great start. If possible, please capture packets on both ends simultaneously.
