Where is "Search In" option? Option "Narrow & Wide" is greyed out?

Are you asking about the "Find Packet" Toolbar? (6.8. Finding Packets)
What version of Wireshark are you working with?
This is toolbar for 4.6.3.

The "Narrow & Wide" option is only available when you search for a string in the packet bytes. As all the other places use UTF-8 (narrow).
