Where do I find Seconds Since Previous Displayed Packet?
I cannot find this preference. I have looked and looked, to no avail.

It's not a "preference" in the sense of the Preferences dialog, it's a display option for the time stamp column, just as "Date and Time of Day", "Seconds since beginning of capture", etc. are, so it's under View.
