When Wireshark first opens, the "Welcome to Wireshark" view allows you to configure an SSH capture.

SSH configuration

How can I access those settings again after I've already performed a capture? I don't see any way of doing it through the Capture Options dialog.

File -> Close of the current capture will take you back to the Welcome Screen

Yes, and then...? Selecting SSH capture again will just start the capture with the same settings, it won't show the settings dialog any more.

4.4. The “Capture” Section Of The Welcome Screen
Click on the "gear" next to the External Capture interface names.

Oh wow, those are clickable? I always thought they are just icons marking the not-actually-an-interface interfaces.

Some interfaces allow or require configuration prior to capture. This will be indicated by a configuration icon (X) to the left of the interface name. Clicking on the icon will show the configuration dialog for that interface.
