Trying to setup capture for TN5250 for AS/400 but I am getting only TELNET protocol listed, not TN5250

I downloaded latest wireshark and I can see the telnet traffic but how do I see the TN5250 protocol captured . I am expecting to see the captures like this https://wiki.wireshark.org/TN5250

Have you observed the note on the page:

Your capture needs to include the start of the telnet session - this is where the TN5250 protocol is negotiated.

Perhaps we need a way to "force" TN3270 and TN5250 in Telnet sessions, in case, for whatever reason (possibly not under their control) somebody didn't manage to capture the session setup?
