Recording users and exporting in real time

I have stumbled across this software and I am thrilled with its power but I need a little push in the right direction as per exporting and filtering. What I need to be able to do is record users who join a network, the time/date of connection, the device name, address (IP + MAC) and when they disconnect as well. In an ideal world I would also get an export on the total amount of packets passed when they do disconenct as well, but I think thats a bit out of scope. If i can just get a log file with who has joined and that information as well as when they leave I'd be happy.
But what I am a little unsure about is how to properly filter just for this information and how to export it into raw text, as I will eventually convert it to a raw printing format to get printed. But i need this information in real time, so for example every 30 seconds it runs a check and auto exports a file.
Is this possible in Wireshark and where should I look for information and help.
