The wireless toolbar has been removed for a long time now, so you must be using an older version of Wireshark.
Anyway, you can set the channel manually outside of Wireshark if that functionality does not work the way you need it to. Setting the channel and bandwidth depends on the underlying OS and depends, obviously, on the adapter and it's capabilities.
