Are you looking to plot a graph of ICMP response time?
If so then an IO Graphs (Statistics -> I/O Graph) will do that.

1. Add a new line to the default graph:
  Y Field: icmp.resptime
  Y Axis: SUM(Y Field)
2. Disable the first two lines: All packets and TCP errors.
